  • ¼ cup coconut oil (melted)
  • ¼ cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips (dairy-free if desired)

Instructions

  1. Prepare the Dough:

    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a medium-sized bowl, combine the almond flour, baking soda, and salt.
    • In a separate bowl, whisk together the melted coconut oil, maple syrup, egg, and vanilla extract.
    • Add the wet ingredients to the dry ingredients and mix until a dough forms. Fold in the chocolate chips.
  2. Shape and Bake:

    • Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them about 2 inches apart.
    • Flatten each dough ball slightly with your fingers or the back of a spoon.
    • Bake for 8-10 minutes, or until the edges are golden brown.
    • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
