- 2 cups cooked chicken, shredded
- 1/3 cup Buffalo wing sauce
- 2 cups shredded Monterey Jack or cheddar cheese
- 8 large flour tortillas
- 2 tbsp butter, melted
- 1/4 cup ranch or blue cheese dressing (optional, for dipping)
Instructions
- In a bowl, mix the shredded chicken with Buffalo wing sauce until well coated.
- Heat a large skillet or griddle over medium heat.
- Brush one side of each tortilla with melted butter. Place one tortilla, buttered side down, onto the skillet.
- Sprinkle 1/4 cup of shredded cheese evenly over the tortilla. Spread 1/2 cup of the Buffalo chicken mixture over the cheese, then top with another 1/4 cup of cheese. Place a second tortilla on top, buttered side up.
- Cook for 2-3 minutes on each side, or until the tortilla is golden and crispy, and the cheese is melted.
- Repeat with the remaining tortillas and chicken mixture.
- Slice each quesadilla into wedges and serve with ranch or blue cheese dressing for dipping.
