  • 1/4 cup brown sugar, packed
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg (optional)
  • 1 egg white
  • 1 tablespoon water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the granulated sugar, brown sugar, cinnamon, salt, and nutmeg, if using. Set aside.
  3. In a large mixing bowl, whisk the egg white, water, and vanilla extract until frothy.
  4. Add the mixed nuts to the egg white mixture and stir until evenly coated.
  5. Sprinkle the sugar and spice mixture over the nuts, stirring to coat each nut thoroughly.
  6. Spread the coated nuts in a single layer on the prepared baking sheet.
