For the Base Recipe:
- 2 tablespoons vegetable oil, divided
- 2 cups cooked white rice, cooled
- 1 pound boneless, skinless chicken breast, diced
- Salt and pepper to taste
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/4 cup green onions, chopped
For the Base Recipe:
- 1/2 cup mayonnaise
- 1 tablespoon ketchup
- 1 tablespoon rice vinegar
- 1/2 tablespoon sugar
- 1/2 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional for spice)
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Season the diced chicken with salt and pepper, then add to the skillet. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of oil and sauté the onions and garlic until softened, about 2 minutes.
- Add the mixed vegetables and cook for another 2-3 minutes until tender.
- Push the vegetables to one side of the skillet. Pour in the beaten eggs on the other side, stirring until scrambled.
- Add the cooked rice, chicken, soy sauce, and sesame oil. Stir everything together and cook until heated through, about 3-4 minutes. Garnish with green onions.
- To make the Yum Yum Sauce, combine mayonnaise, ketchup, rice vinegar, sugar, smoked paprika, garlic powder, and cayenne pepper in a bowl. Mix until smooth and serve alongside the fried rice.
