For the Base Recipe:

  • 2 tablespoons vegetable oil, divided
  • 2 cups cooked white rice, cooled
  • 1 pound boneless, skinless chicken breast, diced
  • Salt and pepper to taste
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 cup green onions, chopped

For the Base Recipe:

  • 1/2 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon rice vinegar
  • 1/2 tablespoon sugar
  • 1/2 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional for spice)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Season the diced chicken with salt and pepper, then add to the skillet. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining 1 tablespoon of oil and sauté the onions and garlic until softened, about 2 minutes.
  3. Add the mixed vegetables and cook for another 2-3 minutes until tender.
  4. Push the vegetables to one side of the skillet. Pour in the beaten eggs on the other side, stirring until scrambled.
  5. Add the cooked rice, chicken, soy sauce, and sesame oil. Stir everything together and cook until heated through, about 3-4 minutes. Garnish with green onions.
  6. To make the Yum Yum Sauce, combine mayonnaise, ketchup, rice vinegar, sugar, smoked paprika, garlic powder, and cayenne pepper in a bowl. Mix until smooth and serve alongside the fried rice.
