- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce

- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon ground white pepper
- 1/4 teaspoon Chinese five-spice powder
- 1 cup all-purpose flour (or gluten-free flour)
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- Vegetable oil, for frying
Instructions
- In a large bowl, combine soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, white pepper, and Chinese five-spice powder. Add the chicken wings and toss to coat. Cover and marinate in the refrigerator for at least 1 hour or overnight for deeper flavor.
- In another bowl, mix flour, cornstarch, and baking powder. Dredge the marinated chicken wings in the dry mixture, ensuring an even coating. Shake off any excess.
- Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry the wings in batches, being careful not to overcrowd the pot, for 8-10 minutes or until golden brown and crispy. Remove and drain on a wire rack or paper towels.
