Master the art of making Chinese fried chicken wings at home with this easy recipe. Learn how to marinate, double-fry, and achieve the perfect crispy texture every time.

Ingredients

Scale
  • 2 pounds chicken wings, separated into flats and drumettes
  • 1/2 cup soy sauce (use gluten-free soy sauce if needed)
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon ground white pepper
  • 1/4 teaspoon Chinese five-spice powder
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, garlic, ginger, white pepper, and Chinese five-spice powder. Add the chicken wings and toss to coat. Cover and marinate in the refrigerator for at least 1 hour or overnight for deeper flavor.
  2. In another bowl, mix flour, cornstarch, and baking powder. Dredge the marinated chicken wings in the dry mixture, ensuring an even coating. Shake off any excess.
  3. Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry the wings in batches, being careful not to overcrowd the pot, for 8-10 minutes or until golden brown and crispy. Remove and drain on a wire rack or paper towels.
  4. Serve hot with your favorite dipping sauces, such as sweet chili or soy garlic sauce.
