- 2 cups elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon white vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup celery, finely chopped
- 1/2 cup red bell pepper, finely chopped
- 1/4 cup onion, finely chopped
- 1/4 cup sweet pickle relish
Instructions
- Cook the macaroni according to the package instructions. Drain and rinse under cold water. Set aside.
- In a large mixing bowl, whisk together mayonnaise, white vinegar, Dijon mustard, sugar, salt, and black pepper until smooth.
- Add the cooked macaroni, celery, red bell pepper, onion, and pickle relish to the bowl. Mix until the pasta is evenly coated with the dressing.
- Cover the bowl and refrigerate for at least 2 hours, or overnight, to allow the flavors to meld.
- Before serving, give the salad a good stir. Garnish with extra chopped celery or parsley, if desired.
