Ingredients

Scale
  • For the Topping:
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 2 cups fresh cranberries
  • For the Cake:
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.
  2. For the topping, melt 1/2 cup butter in a saucepan over medium heat. Stir in the brown sugar and cook until dissolved, about 2-3 minutes. Pour the mixture into the prepared cake pan, and evenly spread the cranberries on top.
  3. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  4. In a separate large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  5. Add the eggs, one at a time, beating well after each addition, then mix in the vanilla extract.
  6. Gradually add the flour mixture to the butter mixture, alternating with milk, and mix until smooth.
  7. Pour the batter over the cranberries and spread it evenly.
  8. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then carefully invert it onto a serving plate. Serve warm or at room temperature.
