- 4 large flour tortillas
- 4 large eggs
- 4 strips of cooked bacon, crumbled
- 1/2 cup bell peppers, chopped
- 1/4 cup red onion, chopped
- 1/4 cup shredded cheddar cheese
- 1/4 cup salsa
- 1/4 cup avocado, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add the chopped bell peppers and onion, sautéing for about 3-4 minutes, until softened.
- In a separate bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the veggies and cook, stirring occasionally, until scrambled and cooked through.
- Lay the tortillas flat on a clean surface. Evenly divide the scrambled eggs, crumbled bacon, shredded cheddar, salsa, and avocado between the tortillas.
- Fold in the sides of each tortilla and roll up tightly to form burritos.
