  • 4 large flour tortillas
  • 4 large eggs
  • 4 strips of cooked bacon, crumbled
  • 1/2 cup bell peppers, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup salsa
  • 1/4 cup avocado, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped bell peppers and onion, sautéing for about 3-4 minutes, until softened.
  2. In a separate bowl, whisk the eggs and season with salt and pepper. Pour the eggs into the skillet with the veggies and cook, stirring occasionally, until scrambled and cooked through.
  3. Lay the tortillas flat on a clean surface. Evenly divide the scrambled eggs, crumbled bacon, shredded cheddar, salsa, and avocado between the tortillas.
  4. Fold in the sides of each tortilla and roll up tightly to form burritos.
  5. Optional: Place the burritos in a skillet over medium heat for 1-2 minutes per side to get them crispy and golden.
