Instructions
- In a large bowl, sift together the flour, baking powder, salt, and sugar.
- Make a well in the center of the dry ingredients and pour in the milk, egg, melted butter, and vanilla extract (if using). Mix until just combined. The batter should be slightly lumpy—do not overmix.
- Heat a lightly oiled griddle or non-stick skillet over medium heat.
- Scoop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, another 2-3 minutes.
