Ingredients
Scale
- 2 cups diced Granny Smith apples (peeled and cored)
- 1/4 cup granulated sugar
- 1/4 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter
- 1 teaspoon cornstarch mixed with 1 teaspoon water
- 1 package (15 oz) refrigerated pie crusts (or homemade pie dough)
- Vegetable oil for frying
- Powdered sugar for dusting (optional)
Instructions
- Prepare the Apple Filling:
-
- In a medium saucepan, combine diced apples, sugar, cinnamon, lemon juice, and butter over medium heat.
- Cook until the apples are tender, about 5-7 minutes, stirring occasionally.
- Stir in the cornstarch-water mixture and cook for 1-2 minutes until the filling thickens. Remove from heat and let cool.
-
Assemble the Hand Pies:
- Roll out the pie dough on a lightly floured surface. Cut into 4-5 inch circles using a cookie cutter or the rim of a glass.
- Place a spoonful of apple filling in the center of each dough circle. Fold the dough over to create a half-moon shape.
- Press the edges together with a fork to seal. For a secure seal, you can lightly moisten the edges with water.
-
Fry the Pies:
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Fry the pies in small batches, 2-3 at a time, for 2-3 minutes per side or until golden brown.
- Remove with a slotted spoon and drain on paper towels.
-
Serve:
- Dust the fried pies with powdered sugar, if desired. Serve warm and enjoy!
