- 6 large eggs
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tsp white vinegar
- 1 tbsp finely chopped chives
- Vegetable oil for frying
Instructions
- Bring a pot of water to a boil. Carefully lower the eggs into the water and cook for 10-12 minutes to hard-boil.
- Once done, transfer the eggs to an ice bath to cool, then peel them and slice in half lengthwise.
- Remove the yolks from the whites and place the yolks in a bowl. Mash the yolks with mayonnaise, mustard, vinegar, paprika, salt, and pepper until smooth and creamy.
- Spoon or pipe the yolk mixture back into the egg whites.
- Set up a breading station with buttermilk in one bowl, flour in a second, and panko breadcrumbs in a third. Dip each filled egg half in flour, then buttermilk, and finally breadcrumbs, ensuring each piece is coated.
- Heat vegetable oil in a skillet over medium heat. Fry the breaded deviled eggs for about 2-3 minutes, until golden and crispy.
- Drain on paper towels and garnish with chopped chives before serving.
