Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 8 wooden skewers (soaked in water for 30 minutes)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Cut the chicken breasts into bite-sized pieces, about 1.5-inch cubes.
  3. In a large bowl, combine olive oil, Parmesan cheese, parsley, garlic powder, onion powder, lemon juice, salt, and pepper. Mix until well combined.
  4. Add the chicken pieces to the marinade and toss until evenly coated. Let the chicken marinate for at least 15 minutes, or up to 1 hour in the refrigerator for more flavor.
  5. Thread the marinated chicken pieces onto the soaked wooden skewers.
  6. Grill the skewers for 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove the skewers from the grill and let rest for a few minutes before serving.
  8. Garnish with additional fresh parsley and Parmesan cheese if desired.
