  • 1/4 cup honey
  • 1/4 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • Powdered sugar, for coating

Instructions

  1. In a small saucepan, warm the molasses and honey over low heat, stirring until combined. Remove from heat and let cool slightly.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and vanilla to the butter mixture, mixing well.
  4. Gradually add the molasses-honey mixture, stirring until well incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, cloves, nutmeg, allspice, black pepper, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms.
  7. Cover the dough and refrigerate for at least 1 hour, or until firm.
  8. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Roll the dough into 1-inch balls and place them on the prepared baking sheets about 1 inch apart.
  10. Bake for 12-15 minutes, or until the cookies are firm and lightly browned.
  11. Let the cookies cool for 5 minutes on the baking sheet, then roll in powdered sugar while still warm.
