- 1 tablespoon olive oil
- 1 onion, diced

- 2 cups beef broth
- 1 can (14.5 ounces) diced tomatoes, undrained

- 2 carrots, peeled and sliced
- 1 cup frozen green beans
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf

Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Remove the beef and set aside, leaving any drippings in the pot.
- Add diced onion to the pot and sauté for 2-3 minutes, until softened. Stir in garlic and cook for an additional 1 minute.
- Pour in beef broth and diced tomatoes. Stir well to combine.
- Add potatoes, carrots, green beans, thyme, parsley, and bay leaf. Bring the mixture to a boil, then reduce the heat to a simmer.
