  • 2 1/4 cups packed brown sugar
  • 1 cup light corn syrup
  • 1 can (14 oz) sweetened condensed milk
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, allowing excess to hang over the sides for easy removal later. Grease the parchment paper with a bit of butter.
  2. In a large, heavy-bottomed saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, and sweetened condensed milk.
  3. Bring the mixture to a boil, stirring continuously. Attach a candy thermometer to the side of the pan, ensuring it doesn’t touch the bottom. Continue cooking and stirring until the mixture reaches 240°F (soft-ball stage).
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Carefully pour the hot caramel into the prepared pan, spreading it evenly. Allow it to cool completely, at least 2 hours, until firm.
  6. Once set, lift the caramel out using the parchment paper. Cut into small squares and wrap individually in wax paper.
