- 1 cup cooked green or brown lentils, cooled
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the lentils, cherry tomatoes, cucumber, feta, olives, red onion, parsley, and mint.
- In a small bowl, whisk together the olive oil and red wine vinegar, then season with salt and pepper to taste.
- Pour the dressing over the lentil mixture and gently toss to coat all ingredients evenly.
