  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 6 large flour tortillas
  • 1/2 cup sour cream (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is soft. Drain excess grease.
  3. Add taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa to the skillet. Stir well and let simmer for 5 minutes.
  4. In the prepared baking dish, spread a thin layer of the meat mixture. Place a tortilla over it, then add another layer of the meat mixture and a sprinkle of cheese. Repeat the layers until all tortillas are used, finishing with a layer of meat mixture and a generous sprinkle of cheese on top.
  5. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Let the casserole cool for 5 minutes, then garnish with sour cream and fresh cilantro before serving.
