  • Total Time: 25 min
  • Yield: 12 mini pizzas 1x

Description

Mini fruit pizzas are bite-sized treats with a cookie base, frosting, and fresh fruit. Perfect for parties, gatherings, or a fun family dessert project!

Ingredients

Scale
  • 1 package (16 oz) refrigerated sugar cookie dough (or homemade sugar cookie dough)
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Assorted fresh fruits (e.g., strawberries, blueberries, kiwi, pineapple, raspberries)
  • Optional: 1 tablespoon honey or apricot jam (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Slice the cookie dough into 1/4-inch thick rounds and place them on the prepared baking sheet, spacing them apart. Bake for 10-12 minutes or until lightly golden. Allow the cookies to cool completely.
  3. In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Spread a layer of the cream cheese mixture over each cooled cookie.
  5. Top the cookies with an assortment of fresh fruit, arranging them in a colorful pattern.
  6. Optional: Warm honey or apricot jam slightly and brush over the fruit for a shiny glaze.
  7. Serve immediately or chill in the refrigerator until ready to serve.
