  • For the crust:
  • 1/2 cup unsalted butter, softened
  • 3 oz cream cheese, softened
  • 1 cup all-purpose flour
  • For the filling:
  • 1 large egg
  • 3/4 cup packed brown sugar
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and cream cheese until smooth. Gradually mix in the flour until a dough forms.
  3. Divide the dough into 24 equal portions. Roll each into a small ball and press them into the cups of a mini muffin tin, forming small shells.
  4. In another bowl, whisk together the egg, brown sugar, melted butter, and vanilla extract until well combined.
  5. Sprinkle a small amount of chopped pecans into each dough-lined cup, then pour the filling mixture over the pecans, filling each cup about 2/3 full.
  6. Top each tassie with a few more chopped pecans.
  7. Bake for 20-25 minutes, or until the filling is set and the edges of the crust are golden brown.
  8. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.
