  1. Place the cubed potato in a small saucepan and cover with water. Bring to a boil and cook until the potato is tender. Drain and mash the potato until smooth, ensuring no lumps remain. Let it cool slightly.
  2. In a large mixing bowl, combine the mashed potato and vanilla extract. Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition. The mixture will start out runny but will thicken to a dough-like consistency as you add the powdered sugar.
  3. Once the dough is firm enough to handle, transfer it to a clean surface dusted with powdered sugar. Roll it out into a rectangle about 1/4 inch thick.
