Quinoa and Lentil Salad Recipe


Description

This quinoa and lentil salad combines high protein, fresh veggies, and a tangy dressing for a healthy and delicious meal.


Ingredients

  • 1/2 cup quinoa, rinsed
  • 1 cup water
  • 1 cup cooked lentils
  • 1/2 red bell pepper, diced
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a small pot, bring 1 cup of water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let cool.
  2. In a large bowl, combine cooked quinoa, lentils, bell pepper, cucumber, red onion, parsley, and mint.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
  4. Drizzle the dressing over the salad and toss well to combine.
  5. Top with crumbled feta cheese, if using, and serve immediately or refrigerate for 15-20 minutes to enhance the flavors.
