This quinoa and lentil salad combines high protein, fresh veggies, and a tangy dressing for a healthy and delicious meal.
Ingredients

- 1/2 cup quinoa, rinsed
- 1 cup water
- 1 cup cooked lentils
- 1/2 red bell pepper, diced
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a small pot, bring 1 cup of water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let cool.
- In a large bowl, combine cooked quinoa, lentils, bell pepper, cucumber, red onion, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper.
- Drizzle the dressing over the salad and toss well to combine.
- Top with crumbled feta cheese, if using, and serve immediately or refrigerate for 15-20 minutes to enhance the flavors.
