  • 1 pound fresh salmon, skinned and cut into small cubes
  • 1 cup freshly squeezed lime juice (about 810 limes)
  • 1 small red onion, thinly sliced
  • 1 medium tomato, finely diced
  • 1 jalapeño pepper, finely chopped (remove seeds for less heat)
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • Salt and freshly ground black pepper, to taste
  • Tortilla chips, for serving (optional)

Instructions

  1. Place the cubed salmon in a large glass bowl. Pour the freshly squeezed lime juice over the salmon, ensuring it’s completely submerged. Cover and refrigerate for 1-2 hours, stirring occasionally, until the salmon turns opaque.
  2. Once the salmon is “cooked” in the lime juice, drain off most of the liquid, leaving just a small amount to retain the flavor.
  3. Add the red onion, tomato, jalapeño, and cilantro to the salmon. Gently mix to combine.
  4. Season with salt and pepper to taste.
  5. Just before serving, fold in the diced avocado for a creamy texture.
  6. Serve immediately with tortilla chips, if desired.
