  • 8 ounces angel hair pasta
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 pound large shrimp, peeled and deveined
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/4 cup dry white wine or chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley
  • Freshly grated Parmesan cheese (optional, for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Cook angel hair pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add garlic and sauté for 1 minute, or until fragrant.
  3. Add shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove shrimp from the skillet and set aside.
  4. In the same skillet, add remaining butter, red pepper flakes (if using), white wine, salt, and black pepper. Simmer for 2-3 minutes to reduce slightly.
  5. Stir in lemon juice and reserved pasta water to create a smooth sauce. Return shrimp to the skillet and toss to coat.
  6. Add the cooked pasta to the skillet, tossing to combine. Cook for 1-2 minutes until warmed through.
  7. Sprinkle with fresh parsley and serve immediately, topped with Parmesan cheese if desired.
