- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon smoked paprika, plus more for garnish
- 1/4 teaspoon garlic powder
- Salt and black pepper, to taste
- Optional toppings: crispy bacon bits, chives, or jalapeño slices
Instructions
- Preheat your smoker to 225°F (107°C) using your choice of wood chips (applewood or hickory works well).
- Place the eggs directly on the smoker grates and smoke for 30 minutes. Once done, transfer the eggs to an ice water bath to cool completely.
- Peel the eggs carefully, then slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Arrange the egg whites on a serving platter.
- Mash the yolks with a fork until smooth. Add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper. Mix until well combined and creamy.
- Use a piping bag or spoon to fill the egg white halves with the yolk mixture.
- Garnish with a sprinkle of smoked paprika and your choice of toppings such as crispy bacon bits, chopped chives, or jalapeño slices.
