  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon smoked paprika, plus more for garnish
  • 1/4 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Optional toppings: crispy bacon bits, chives, or jalapeño slices

Instructions

  1. Preheat your smoker to 225°F (107°C) using your choice of wood chips (applewood or hickory works well).
  2. Place the eggs directly on the smoker grates and smoke for 30 minutes. Once done, transfer the eggs to an ice water bath to cool completely.
  3. Peel the eggs carefully, then slice them in half lengthwise. Remove the yolks and place them in a mixing bowl. Arrange the egg whites on a serving platter.
  4. Mash the yolks with a fork until smooth. Add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper. Mix until well combined and creamy.
  5. Use a piping bag or spoon to fill the egg white halves with the yolk mixture.
  6. Garnish with a sprinkle of smoked paprika and your choice of toppings such as crispy bacon bits, chopped chives, or jalapeño slices.
  7. Serve immediately or chill in the refrigerator until ready to serve.
