- 1 lb ground beef
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (28 oz)
- 1 can tomato sauce (15 oz)
- 1 can beef broth (14 oz)
- 1/4 cup uncooked long-grain white rice
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, for garnish (optional)
Instructions
- In a large pot over medium-high heat, brown the ground beef until fully cooked, then drain excess fat.
- Add the chopped onion, green bell pepper, red bell pepper, and garlic to the pot. Cook, stirring occasionally, for 5-7 minutes, or until vegetables are softened.
- Stir in the diced tomatoes, tomato sauce, beef broth, rice, Italian seasoning, salt, and black pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until rice is tender.
- Taste and adjust seasonings as needed. Garnish with fresh parsley if desired, and serve hot.
