  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (28 oz)
  • 1 can tomato sauce (15 oz)
  • 1 can beef broth (14 oz)
  • 1/4 cup uncooked long-grain white rice
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large pot over medium-high heat, brown the ground beef until fully cooked, then drain excess fat.
  2. Add the chopped onion, green bell pepper, red bell pepper, and garlic to the pot. Cook, stirring occasionally, for 5-7 minutes, or until vegetables are softened.
  3. Stir in the diced tomatoes, tomato sauce, beef broth, rice, Italian seasoning, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until rice is tender.
  5. Taste and adjust seasonings as needed. Garnish with fresh parsley if desired, and serve hot.
