- 1 lb ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or beef broth
- 1 can (14 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Instructions
- In a large pot or Dutch oven, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is tender. Add the garlic and cook for 1 minute more. Drain any excess fat.
- Stir in the broth, diced tomatoes, tomato paste, basil, oregano, and red pepper flakes. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Add the broken lasagna noodles to the pot and simmer for 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
- Season the soup with salt and pepper to taste.
- In a small bowl, combine the ricotta, mozzarella, and Parmesan cheeses.
- To serve, ladle the soup into bowls and top each serving with a dollop of the cheese mixture. Garnish with fresh parsley or basil if desired.
