- 1 tablespoon chia seeds
- 1 teaspoon lemon zest
- 1 tablespoon maple syrup (or honey)
- 1/3 cup fresh or frozen blueberries
- Optional: 1 teaspoon shredded coconut or chopped nuts for topping
Instructions
- In a small mixing bowl or jar, combine rolled oats, almond milk, Greek yogurt, chia seeds, lemon zest, and maple syrup. Stir well to ensure everything is evenly incorporated.
- Gently fold in the blueberries, being careful not to crush them.
- Cover and refrigerate overnight or for at least 4 hours.
- Before serving, stir the oats well and top with shredded coconut or chopped nuts, if desired.
