  • 1 cup chopped celery
  • 1 cup chopped green beans
  • 2 cups diced potatoes
  • 1 cup frozen corn
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat. If using ground beef, cook and crumble it, then drain excess fat. For stew meat, brown on all sides and remove from the pot.
  2. Add onion and garlic to the pot. Sauté until fragrant, about 2-3 minutes.
  3. Return the beef to the pot, then stir in beef broth, diced tomatoes, and water.
  4. Add carrots, celery, green beans, potatoes, and seasonings. Stir well.
