- 1 pound ground beef or stew meat
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 (14.5-ounce) can diced tomatoes
- 2 cups water
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped green beans
- 2 cups diced potatoes
- 1 cup frozen corn
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat. If using ground beef, cook and crumble it, then drain excess fat. For stew meat, brown on all sides and remove from the pot.
- Add onion and garlic to the pot. Sauté until fragrant, about 2-3 minutes.
- Return the beef to the pot, then stir in beef broth, diced tomatoes, and water.
- Add carrots, celery, green beans, potatoes, and seasonings. Stir well.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for 30-40 minutes or until vegetables are tender.
- Add frozen corn during the last 10 minutes of cooking. Adjust seasoning as needed.
