  • 1/2 lb ground veal
  • 1/2 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 1 cup dry white wine
  • 1 cup whole milk
  • 1 cup chicken or beef broth
  • 1/2 cup heavy cream
  • 1/4 teaspoon nutmeg
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 lb pappardelle or tagliatelle pasta
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, garlic, carrot, and celery, and sauté until softened.
  2. Add ground pork, veal, and beef to the skillet. Cook until browned, breaking it apart as it cooks.
  3. Pour in the white wine and let it reduce by half.
  4. Stir in the milk and broth, then season with nutmeg, salt, and black pepper. Let simmer for 45-60 minutes, stirring occasionally.
  5. Pour in the heavy cream and stir to combine. Simmer for another 5 minutes.
  6. Cook the pasta according to package instructions. Drain and toss with the sauce.
  7. Serve topped with grated Parmesan and fresh parsley.
